Grapes for this 100% Sauvignon Blanc are sourced from estate owned, dry farmed vines grown on an outcropping of limestone. Fermentation takes place via native yeasts, and the wine is aged in about 2 3 stainless steel and 1 3 neutral French oak 500L puncheons for around 4 months.
